做法:春笋切成片后(hòu )加少许盐捞出后(hòu )用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺(sháo )油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬(áo )干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
