做(zuò )法:春笋切成片(piàn )后加少许盐捞出后(hòu )用清水(shuǐ )浸泡,生姜切片(piàn ),葱切成(chéng )段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半(bàn )掩住(zhù )春笋,盖上锅盖(gài )大火煮开后转(zhuǎn )中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
