做法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺(sháo )油,放(fàng )入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻(fān )炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量清水半掩住春笋,盖上锅(guō )盖大火煮开(kāi )后转中火。煮到水快熬(áo )干的时候(hòu )加入盐,翻(fān )炒均匀稍收汁时盖上锅盖(gài )焖。
