做法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入少量清水半(bàn )掩住(zhù )春笋,盖(gài )上(shàng )锅盖(gài )大火煮开后转中火。煮到水快熬(áo )干的时候加入(rù )盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅(guō )盖焖。
