做法:春笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段(duàn )。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半(bàn )掩(yǎn )住(zhù )春笋,盖上锅盖(gài )大(dà )火煮开后转中火。煮到水快熬(áo )干的时(shí )候加入盐(yán ),翻炒均匀稍(shāo )收汁时盖上锅盖焖。
