做法:春笋切成片后加少许(xǔ )盐(yán )捞(lāo )出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加(jiā )入少量(liàng )清水半掩住春笋,盖上锅盖大(dà )火煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
