做(zuò )法:春笋切成片后加少(shǎo )许盐捞(lāo )出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段(duàn )。锅烧热(rè ),倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老(lǎo )抽(chōu )、蚝油翻(fān )炒均匀(yún ),加入少量清水半(bàn )掩住(zhù )春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁(zhī )时盖上(shàng )锅(guō )盖焖。
