做(zuò )法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生(shēng )姜切(qiē )片,葱切成(chéng )段。锅烧热(rè ),倒入2勺油,放(fàng )入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时(shí )盖上锅盖焖。
